These recipes are inspired by vegetables offered in our CSA share and will focus on combining those elements. There are some good seasonal recipe books available but every location is different and Northern Colorado doesn’t always have the same seasonal produce at the same time as other locations. The recipes we post this season will be our attempt to combine what we have ready to harvest in tasty ways.
Sauteed Pea Shoots with Garlic
This recipe was inspired by Alice Waters book, The Art of Simple Food II
Oil like olive or avocado (coconut might be nice especially if you add the ginger)
Pea shoots ( handful per person)
Garlic (one clove per two people)
Salt to taste
Wash and drain a handful of Pea Shoots per person
Saute over medium heat in an oiled skillet.
Once wilted make a hole in the center exposing the skillet.
Add a little more oil and toss the garlic in the opening you made.
When the garlic is aromatic its done. This is not long just a few seconds.
Remove from heat.
Stir all together and season with salt and ginger if you like.
